Happy Saturday Everyone!

I'm putting together a round of new pictures to send my SO  He's been working 18hr days over there in Egypt and needs a little pickup :)

Anyone got some good chicken recepies? I'm running out of ideas and I still have a bunch of chicken in my freezer

Moroccan "Fried" Chicken:

1 small to medium onion

3 cloves garlic

water

1-2tsp each of saffron, parsley, pepper, ginger, salt

1/2 tsp cumin

inside of one preserved lemon

whole chicken

vegetable oil

Chop onion and garlic and blend together in a food processor. When blended add to a large cooking pot. Mix spices the inside of the preseved lemon and a little oil together in a bowl to form a paste. Rub this all over the chicken until fully coated. In the large pan with onions, add the chicken, and cover with water until chicken is almost submerged. Turn on high until boiling then reduce to medium. Let cook until cooked through but not falling apart (about 45 minutes). Once done remove the chicken and place in a collander - allow it to drain until chicken is totally dry. Meanwhile leave the liquid on the stove to reduce to a sauce. You can add some olives to the sauce if you like. When chicken is totally dry, heat up a frying pan with enough oil to fry (1/2 inch). Place chicken in hot oil breast side down first. Fry all sides of the chicken. Once it is crispy, remove and place on a clean plate. Warm up sauce and pour around the chicken (not on top!) - You can also sliver the remaining piece of the preserved lemon and place it on top of the chicken.

Happy Saturday - Got a new book today and have a load of homework to do..Youssef is working until 5 so probably won't get much studying done until he gets home. Lasagna tonight with garlic bread, a big salad and something for dessert (haven't decided yet).

Good morning everyone! I woke up early for some reason this morning and I've already cleaned the hardwood floors and did a load of laundry. The kids are wanting belgium waffles for breakfast so I have to did out the waffle maker! I'm off later to look for office furniture for the new clinic! The workers painter Thursday and today the carpet goes in. Things are really moving fast now! We have the new office number now so my business partner and I rotote having calls forwarded to us until the clinic opens. Seems we're going to be busy from the start which is awesome! Tonight the kids and I are carving pumpkins so I'm sure my husband will look at us very strange and say "tell me again WHY do you do this?"

Have a great day everyone!

We have a pumpkin that my youngest carved last night at Girl Scouts. His name is Fred. Fred smelled the car up last night 'cause he was in the back seat while we went to get dinner. lol. Fred has eyebrows.

We're off to the big bad mall to get hats, scarves, mittens and winter coats. Winter coats. It's going to be 78 degrees outside and it's mid October.

I'm gonna need a large tripple shot latte on our way there. :P

A triple shot sounds good about now. I bought gloves yesterday, one pair black and one in brown. It is still nice in the midwest but I have seen snow before on Halloween. One of the joys of Chicago, we have 4 distinct seasons, sometimes all in one day. :)

The new clinic sounds like it is coming along nicely.

Now I got that Barbie song stuck in my head......'I'm a Barbie girl, in a Barbie world....'

It's cold and wet outside and I have more music video to shoot today. I just pray that I get all the shots I need for editing today.

I am at the cafe sipping on the special of the day "A carmel apple latte". (L) Holiday spirit.
