Is there a form I need to fill out with USCIS if I move before receiving my NOA2? My old address would be my parents so there is no issue in not receiving the NOA2 when it does arrive. The only address change form I saw on the USCIS was for an alien changing their address.

No need to report moving to USCIS, this probably get the NOA2 letter lost, and you will need it later.

Later when your fiancee gets paperwork from the consulate, your fiancee will indicate address in the USA on those forms.

I agree that changing your address is just a potential monkey wrench in the works. You might want to just file a change of address with the post office. You'll lose a few days as the post office forwards your mail, but it'll at least be delivered to your new address. And the post office will forward your mail for 1 year, which should be more than long enough to get through the process.

Change of address at the post office is also not a good idea.

USCIS puts a return service requested note on most things they send out, USPS sees this notation and returns rather than forward the mail.

I used to work in a department of a college that handled bill mail, and anything we sent to students had that notation, the mail would come back instead of getting forwarded, we then would use the forwarding label to update our records before sending the mail back out.

From what I read USCIS does not do anything with the returned mail.
