I started making Chili when I lived in Wyoming. I have my own, rather eclectic recipe....

1 pound coarse ground beef

2 cans pinto beans (or fresh, cooked Pintos)

2 cans tomato sauce (or 1 can sauce, one 12oz can of V8 veggie juice)

1/4 can of water (use tomato sauce can - leave out if using V8)

1 can stewed tomatoes - cut up; cubed, rather than diced.

1 small can diced green chiles

1 small can diced jalapeños

"Some" Cumin (I measure nothing, usually)

Tapatio, or other Mexican hot sauce. To taste.

A few good shakes of Chugwater Chili powder - a Wyoming staple. ( http://www.chugwaterchili.com/ )

Simmer on the stove for an hour or so.

Sometimes I add other bits to that. That's the normal base, though.

I've made it with Sirloin, tofu, chicken, and soy-beef crumbles before. Ground beef tastes best, though.

I wish I had seen this, it sounds delish

That's what I make when there's nothing else in the house.

It's meatloaf's wetter sister. blech.

They both beat eating opossum. :P

How would you know that?

I listened to Jimmy Carter being interviewed about his childhood memoirs. He said he could smell the oppossum cooking a mile away before he even got home from school.

There I was... just scrolling down this thread and laughing my butt off. When I saw the photo of Meatloaf I just flat fell out of my chair.

I have not heard any one mention flank steak. Perfect for chili. Softens up nicely when stewed for awhile. Just cut it up in little strips. Cheap too.

IMO The best Chili is made in a slow cooker using either serloin or Ground beef

Slow Cookers are perfect for chili, put all the ingrediants in slow cooker leave in for 8-10 hours

Explodes with flavor!

make side of cronbreak or even put it over a bed of white rice.

MM The best!

I make chili out of round steak or chuck roast. Just cut it up into pieces the size of a small bean and cook it for at least an hour. I don't like ground meat in chili.

Chili originated as prison food as a way to cover up the taste of rancid meat.

LOL, that's why I wouldn't waste a good steak in it. That's what I make when there's nothing else in the house. No offense to the chili lovers....I'm sure it's just that I've never had "real" chili.

You've never had "real" chili unless you've been to New Mexico.

I have.

New Mexico has some of the best "Mexican" food anywhere in the states. I think it's the flatbread tacos that won me over....

Lady, people aren't chocolates. Do you know what they are mostly? Bastards. ####### coated bastards with ####### filling. But I don't find them half as annoying as I find naive bobble-headed optimists who walk around vomiting sunshine.

This is interesting...

What is the spice that gives chili its unique flavor?

Obviously, the flavor of chili begins first and foremost with chili peppers. In addition, cumin provides a special flavor. Most chili seasonings also contain garlic and oregano.

What is capsaicin?

A potent compound found in the seeds and membranes of chile peppers that makes your mouth burn and eyes water. The heat in a chile pepper is measured in scoville units.

What makes chili addicting?

When capsaicin comes in contact with the nerves in your mouth, pain signals are sent to the brain. Subsequently, the brain releases endorphins, natural painkillers that create a feeling of well-being. The more spicy food you eat, the more endorphins are released. The effect is a pleasurable feel that true chiliheads crave.

What is the best way to cool a burning mouth?

Milk, yogurt or sour cream. Water, soda, or beer won't work.
