I have a couple of questions for you...

if your case is complete with NVC,

(1)what type of visa did you apply for?

(2)Or, are you just applying now?

Your lawyer should be able to explain to you the different type of visa you can apply for. In a matter of personal opinion given the fact that you are married for more than 5 years, I will go for IR1. It's the most practical way to go for and your wife will be given the 10-year green card.

If we've been married since the process started is there a difference in what we applied for?

Yes, it does make a difference. You are most probably in category IR1 since you are married for 5 years, if your spouse is US citizen. If your spouse has GC, then you are in category F2A.

Remember there are no derivative benefits if you are in IR1 category. This means if you have kids, they must have their own I-130 filed on their behalf. Good Luck

NVC is not the Texas Service center but usually when the terms NVC and Complete are mentioned together, it is an immigrant visa process. So the options would be as jaxguy describes above, IR1 or F2A, depending on whether the spouse is a citizen or permanent resident.
