My approval notice for my fiance ends at the end of this month and I'm not quite sure where to send a request for an extension. I had my fiance contact the Consulate in London and they aren't exactly clear on things. If anyone can give me an answer or some tips that would be great because I'm super stressed right now.

You don't need to do anything. Unless they determine at interview they intend to deny the visa, the validity of the petition will be extended. Consular officers have the authority to do this multiple times if needed and do so routinely unless they have cause to deny the visa.

They haven't give him an interview date yet. He sent in the forms and they say they haven't gotten them so he's gathering them up again, and I'm trying to extend the approval so he can get the interview...

If the petition is at the embassy thei will extend it as long as they are not waiting for anything from you.
