How long does the I-131 actually last?? Once I succesfully change my status with the AOS will i then be eligible to travel back to england without filing for anything??

If i do file for the AP doc it say's write on a seperate sheet of paper why i am eligible for the AP what would i put for this??

The AP is valid for 1 year from issue date. Once you have successfully passed the AOS interview AND have either the actual green card, OR an I-551 stamp in your passport, you are free to come and go as you please.

For the eligibility question, you would describe why you need an AP. My wife said that she needed one because her mother is elderly and she might need to travel at short notice.

AP lasts one year from the issuing date, which is very rarely one year from when you receive it! You pretty much need to renew it after about a year, and it's advisable to send in the renewal early just to make sure you've got them overlapping.

You can also get emergency APs if you need them, but they need documented proof to be sent out.

My eligibility was pretty simple, I said I wanted a vacation to return home.
