For example, if my girlfriend lists 2 jobs she has had over the past 3 years and they find out she worked somewhere four and a half years ago for 1 week will they deny her?

Also, I am submitting court documents regarding 4 separate cases I picked up over 5 years ago. I checked the box stating I have been convicted of 3 or more alcohol/controlled substance related offenses. I did not submit the court document for a charge that occurred 2 years ago (open intoxicants in a vehicle) and the case was dropped. Will they be outraged if they come across this very minor offense that was dismissed in court anyway? And does having 3 offenses slow down the process or increase the chances of my girlfriends visa being denied?

1. If you know she worked in a place 4 1/2 years ago, why wouldn't you list it on the application, as it is specifically requesting that information?

2. Again, same logic - why not submit all the court documents that are requested, not just submit the ones you want to?

3. I have heard of RFEs for court documents for obscure cases that the petitioner did not think that USCIS could even find. For people that supplied all the information upon filing, I have not heard of any delay.

The rules on the forms are RULES not suggestions. Provide all the accurate information they ask for. Passport photos must be the exact specification they say - if not, they'll send you an RFE for the correct size. Forms require your signature indicating that all the information is correct and accurate, under penalties of perjury/fines/imprisonment. You're dealing with the US government and a lot is at stake if you want her to get a visa. Just read the instructions and follow the rules.
