There isn't a place to put my income from child support on the I-134. Can I just add it in with my regular annual income and then attach a letter to explain it? Or how is this done?

Child support is not income. The money received is specifically allocated for the care of your child/children.

Find another source to meet the income requirement.

Do you have documentation of court ordered child support? I believe what I am going to do is send a copy of the documentation of the court ordered child support as well as a print out of all of the payments that he has made (just in case they ask for it) since the order has been in effect (even though he is severly behind in payments) along with the I-134.

Yes, I realize it's not income in the traditional way, and I'm not expecting to use it to support my fiance. However, I will be putting on my form that I have four children, two of whom I claim on my income tax, and the child support I receive DOES support THEM! Therefore my other income is sufficient to support my fiance. How else would they know that my dependents are cared for if I didn't tell them this?

Child support is indeed income, and adjudicators are clearly instruced that it is allowed.

I stand corrected. It does seem counterintuitive that CS can be considered income, considering that it serves one specific purpose.

Well, USCIS doesn't say you DON'T count the child in the household total. If they did, it would be counterintuitive.
