Does anyone have a recipe for molokhia? I looked on most pages of sultans kitchen and I couldnt find it. I have the frozen greens, so just need to know how to cook it, what else to add, etc. I would prefer a recipe that I can make fast, with a pressure cooker, etc.

You may find a recipe under Mlokheieh, sometimes the spelling makes a difference.

I'm not sure if you are going to use chicken or lamb, but its pretty close. If you are using lamb, you need to boil it first (add a couple of bayleafs to the water) and remove all the icky stuck that comes to the top of the water and then simmer it until tender. If you are going to make it with chicken, you are going brown the chicken on both sides and then add a little bit of water and let the chicken cook all the way through.

Once the meat is ready, pour out all the water and put the meat back in the pot. Break up the greens and put them on top of the meat and cover with water. Bring it to a boil, if its too thick then add more water and if its too thin add more greens. If you don't like it gooey (which we hate), add the juice of some lemon while its cooking. As its cooking, you can also add a few springs of cilantro which gives it a nice taste. After its done, add the salt. Serve over rice.

wow lots of molokheia haters in the other thread! i think its so yummy, i dont get it! its sorta like the tunisian pkalia which i also love.
