One option might be to just leave EVERYTHING in the maiden name until she naturalizes.  I see potential issues with a "new" marriage.

Depends on what the OP did with respect to the GC.

We got married in Nicaragua

There should be no problem with marriages that occur here in Central America, considering the ridiculous process you have to go through to get married here.  As someone mentioned, they may need a apostilled certificate, or wait for her green card.

Honestly sounds like you talked to someone who doesn't know what they are doing.

This is why I got apostile documents when getting married, someone argued it wasn't necessary, and usually isn't, but for cases like these, it was little work when I had the opportunity, in relation to if an issue like this had arisen and I had to figure out how to get one.

Doesn't matter. If it was good enough for immigration purposes, it's more than good enough for the DMV. The green card is sufficient, ask for a supervisor. My husband used his green card, he was never asked for a marriage certificate.  Why would they ask for a marriage certificate to begin with? Most people aren't married when they get a license or even a real ID. Did you present the marriage certificate as ID without being asked for it? My son didn't get his license until he was in his twenties but he got an ID from the DMV when he was 16, a marriage license wasn't even on the list of approved documents required for identification.  You cannot get married again, when you're already married. Period.

It looks like we’re all giving answers without the full context and making assumptions. OP, if you want the best advice could you answer the following questions:

1) what state?

2) what last name did your wife apply under

3) Is your marriage certificate translated

4) What did they specifically say you needed to do for them to accept the foreign marriage certificate

Seems the OP disappeared, but definitely do not marry again. You would have to fraudulently state you are free to marry.  If this is about shortcutting a name change that wasn't already done, just abandon that idea and get driver license in the name on her passport and green card.

Further, a  new immigrant does not need a State issued Real ID to travel domestically.  Their passport is real ID enough.

A Warning to Green Card Holders About Voting

Sounds like you are not eligible to get a DL in your state in a name other than what is on your current immigration documents because you are an immigrant and it has nothing to do with you "claiming married on your DL" (since when do DLs have relationship statuses on them?)

That IS the protocol.

Married Immigrants change their name by applying for their first immigration document their married name.

You've done that. Once you get that document, you'll be eligble for a DL in that name. That's exactly how it works.

Why even bother with a real id? My wife has been here for 7 years now and has no drivers license or id. Green card and passport are all the id she needs. No one asks for 3 pic ids.

So just be patient and wait for green card.
