Hello! I know I need a letter from my employer (I work for the government) stating various things. I asked HR and they stated that an sf50 should be sufficient. Is this true? It shows the nature of employment and my annual salary. Do I need an actual letter or is this fine? Furthermore, our i129F was approved in September. Will the validity be extended for a year?

My fiancee is currently working on getting the 3 civil documents required for the Peruvian embassy. What else is needed? Birth certificate, passport, civil documents, approved i129F... anything else? A checklist of things required for the actual interview would be helpful. Thank you so much.

It's my understanding that you only need a letter from an employer if you can't verify employment by other means.
If you can provide your W2 and even better (as I understand it) tax transcripts along with that... you should be good.
I'm new to this, so I could be wrong, but I believe that is the case.

the letter from the employer isn't 100% needed. its just something extra to have.

but it should state your title, whether you are full time/part time, your salary, and your start date. Ideally it would be on business stationary and signed.

you can find a list of things to bring to the interview here

I wouldn't assume that validity of the petition will be extended for up to a year as I think that was certainly the case during Covid but it could have changed now. If the petition expires then you can revalidate the petition at the visa interview by bringing a signed letter of intent from each of you saying that you both will still get married within the 90 days.

I did this at my interview and they never said anything to me and it was all ok

I take it this means you received your NOA2?  NOA2 has a four month validity period, which can be extended should the wait time require it.  When our case was projected to take longer than the four months, we were a bit rattled because USCIS sent us a new NOA2 with new validity dates.
