In the updated Form I-134 (updated on the 13th Jan 2025), it states the following, 'Who May File Form I-134? You may file this form on behalf of yourself or on behalf of a B, F, or M nonimmigrant requesting extension of stay or change of status. Form I-134 may also be requested by Department of State in certain instances.

Do not use Form I-134 if the beneficiary you are agreeing to financially support must have Form I-864, Affidavit of Support Under Section 213A of the INA, filed on their behalf instead

 

In light of the above, can anyone clarify if the K1  Visa holder is NOW required to submit their Form I-134 when attending their interview...

Yes, nothing has changed in that regard, not sure where you got the idea it had changed.  
 

The I-864 is used later when adjusting status in the US.

Your answer is right here... "Do not use Form I-134 if the beneficiary you are agreeing to financially support must have Form I-864." The K-1 Beneficiary does not require the I-864 so you would still use the I-134

To be fair it is rather goofy wording and a failure of a tautology.  It assumes that if the beneficiary doesn't need an I-864 then you need an I-134, by stating the opposite. I see how OP could see how it lacks in validation, because it does.

 

But yes, an I-134 is definitely needed still with K1.  You won't need it for AOS because, as stated, there will be need for the I-864 then.
