Almost Been Two Years

We last met almost 2 years ago. We had last met March 2023 and were planning another trip August 2023 before submitting K1, but then I was laid-off for 10 months. We have just applied for K1 a few days ago. The 2 year mark will be reached March 2025, Will USCIS and NVC still process the K1 or will they cancel our application?

Welcome to the forum!  If you're talking about the I-129F petition that you submitted to USCIS, you just submitted it, and you filed within the 2-year range for last meeting in person.  (The K-1 visa application comes later, after petition approval -- terminology is important.)  For USCIS's purposes, your petition is valid in terms of time of meeting.

 

For the consular interview, definitely try to get as much time in person together as possible.

I echo @TBoneTX with his comments.  You are fine for the I129F petition filing, but do as much as possible to have additional meetings, and show proof of an ongoing relationship for when the consulate phase comes up in a year or so.  This is especially important when petitioning someone from a high fraud country.
