I kept everything, even stuff I didn't think was needed. Once it's been filled out, there does not appear to be an * asterisk in front of any of the questions, either. I guess too much info is better than not enough.

Makes no difference at all in terms of cost and speed. The 3-year rule petition requires slightly more paperwork, but nothing massively. The IO will likely still look at the last 5 years no matter what you choose, since she has been a greencard holder for at least that long.

I've seen people reporting on VJ 5 year rule filers being approved much sooner while 3 year filers are still waiting... I think a lot of them have I-751 not yet approved  though.
