Can my Spouse fly out of a different destination that is different then where he obtained his Spouse visa to the US after being approved for his Spouse visa in mainland china?

My husband lives in mainland China and is awaiting his Spouse visa. I live in NYC. I am planning to fly back to see him and to enter the US together with him, for when his Spouse visa is granted.

My question is, would it be possible for us to fly out of another destination like Hong Kong,  together to America after he gets his visa from the consulate in Mainland? Is there a general rule that he must fly out of mainland China where he obtained his Spouse visa?

We wanted to visit my family before coming to America and make that stop in Hong Kong and wanted to go straight to HK and then to America from HK. I was wondering if we could just fly out of Hong Kong instead of going back to mainland China to fly out to America?

Yes you can fly out from wherever is convenient for you.

In your case, the only requirement is either you arrive together or the petitioner is in the US first.  Since you mention traveling together it sounds like your plan is good.

China is a huge country with only one place to get an immigrant visa.  Of course you depart from wherever, even if your international departure is outside China.
