Any idea on what papers and documents I should take with me? That is what I am stuck on. Do I need my taxes and do I need the joint sponsors as well?

Yes, take a completed I864 for you and also one if you are using a co-sponsor along with all the supporting evidence.  Also, bring a copy of your BC and your parents marriage certificate.  Basically bring all the information you submitted for your mother's petition.
