I think all the lucky ones are at National Benefits Center, which is what I got.  But, with that said, only a small minority of NBC actually get lucky so I don't have my hopes up.  And, I think some of those are military.

Man Texas not only the slowest but also they interview rates are way more then NBC

This is what it is. We will see how it goes :(

Extension letter, receipt notice, NOA1, Notice of Action, I-797 is all the same document people refer to...

Is it printed on special paper?  Or, can one just print the receipt notice from myUSCIS and use that one?

Yes, I-751 receipt is printed on watermarked pale green paper.

You can try using it in the US (your mileage may vary). I wouldn't travel on it internationally. Airlines are very likely to deny boarding without original letter and original expired GC.

Checked the status today on https://www.casestatusext.com/

the status of our case changed to

Biometrics Appointment Was Scheduled

I thought Biometrics are reused?

or do we need to wait for the letter to read and see what it says?

Biometrics are reused, but not for everybody. Prior to COVID everybody had to go to biometrics appointment. With new administration coming, majority of people may be required to go to biometrics appointment again.

The letter will tell you when and where to go. It should only take 10 minutes there to verify your data and get fingerprinted.
