Hey me and my fiancée are getting close to the end of the K1 Visa but I have a question for the future that maybe someone here might have an answer to. 
 

I (US citizen) am an overseas religious worker and it’s our hope to continue this after we get her green card. We would need to be in the US for about a year and a half before going. It is our intent to live in America when I no longer have an overseas assignment but until then we regularly would return for 1 year furloughs, hence the need for a green card. I know about the 131 travel permission form but would this possibly affect her getting a green card due to permanent residency issues?

Nice she gets her GC and there are plans for extended stays outside the U.S. for more than 12 months, she should apply for a re-entry permit (also the I131 form) after she gets her GC, but before leaving.  Your future plans should not impact her getting a GC as long as you have proof you intend to maintain residency in the U.S..  The biggest impact will be to future naturalization (maintaining continuous residency) if she plans to take that route.
