Your alternate suggestion is not an option. Joint sponsor .. friend or relative who is a USC or LPR.. or she gets a better paying job or gets second job to bring her above the threshold

ofcourse I can sign a legally enforceable document that I will pay back everything the joint sponsor ends up paying for me.

this is not up to u,  the benefiary ,  to find joint sponsor unless u can offer family of yours in the US to help

 

u say GF but listed under spouse visa /which is it?

 

Florida minimum wage is $13 and hour/   she can take on a part time job as even 20 hours a week adds over $13000 a year to income

 

so she needs to decide 

1  find a  joint sponsor 

2. look for better job to meet requirements

3.  get a 2nd job

 

u say u can sign a prenup,  that does not satisfy the petitioner and joint sponsor I 864 agreement with US government

the co sponsor is responsible, financially for you for 10 years, or until you become a US citizen, if you decide to. 
 

there is no getting away or ‘signing’ that away. That’s the legal position.

Untrue, read the I864

I never said there was signing this away. I would sign something that doesn't stop them from paying for my things, but something that forces me to pay them back.

I will marry her before I get sponsored to the US. Also, she is a full time student, so doesn't have 20 hours a week to sacrifice to a job.

Sign what you want to.  It’s not an option for this process.

I suggest she join us here for this conversation.  I also suggest you both study the I-134 and I-864 instructions. Googling I-864 joint sponsor might be helpful also.

In summary, it took 13 months for approval of the CR-1.  It took 44 months for approval of the I-751.  It took 4 months for approval of the N-400.   It took 172 days from N-400 application to Oath Ceremony.   It took 6 weeks for Passport, then 7 additional weeks for return of wife's Naturalization Certificate..
