NOA2 Expiration/Validity Date and Interview Date

Hello, The expiration date on our NOA2 is 26Dec2024. We are needing to conduct the medical and interview at the US embassy in Manila in late January 2025 so to give me the petitioner time to fly to Manila to be with my fiancé due to her needing my help in navigation everything in Manila.  She is unable to do it on her own.  The case was updated to 'Ready' on 7Nov2024. Neither me nor my fiancé have received any communication from NVC nor the US embassy in Manila. I submitted public inquiry to both NVC and the embassy inquiring about having not received any notification. The NVC just told me that they had sent the K1 petition to the US embassy and did not address not having sent me a FTP email notification. I sent the inquiery to the US Embassy in Manila about two weeks ago and finally received this response: 

 

"Dear Mr. .....

We are writing in response to your November 8, 2024, inquiry to the Immigrant Visa Unit concerning the fiancée (K1) nonimmigrant visa case of Ms. ........... 
 
An approved K1 nonimmigrant visa petition (I-129F) is valid for four months from the date of its approval by the U.S. Citizenship and Immigration Services (USCIS).  Consular officers may revalidate the petition during the applicant’s visa interview if eligibility requirements are met.  Each revalidation is good for an additional four months.  However, if the officer determines that there is insufficient evidence of continued intent to marry, the petition may be returned to the approving USCIS office. 
 
If the petition is expired, the applicant is still able to proceed with an interview and the determination will be made at that time.  The revalidation happens, when approved, at the time of interview and not in advance. 
 
The applicant must now schedule an appointment at the Visa Application Center (VAC) for the fingerprints and photo requirements, and an interview appointment at the embassy through the Embassy’s Customer Service Center. English and Filipino-speaking customer service agents are also available at telephone numbers (+632) 7792-8988 or (+632) 8548-8223.  The call center is open Monday through Friday, from 8:00 a.m. to 5:00 p.m. (Manila time), except on Philippine and U.S. holidays.  Callers in the United States should call (703) 520-2235 on its Eastern Standard Time equivalent of operation hours. 
 
Prior to their appointments, applicants must ensure that all details are correct in their visa application (Form DS-160).  Including given name, surname, gender, passport number, and date of birth.  The barcode number on the DS-160 confirmation page must match the number indicated in the applicant’s appointment letter. 
   
Applicants should follow all interview preparation instructions located on the State Department's website. The website identifies the required documents as well as procedures to follow prior to the interview date.  Applicants must bring the original required documents to the interview. 
 
If the applicant needs reasonable accommodation (PWDs) for the visa interview appointment, please follow the instructions on our website.

At this time I have submitted the DS-160 and paid the visa fee on usatraveldocs.  It sound like from the response from the embassy that I can go ahead and schedule the interview after the NOA2 expiration/validity date. At this it does not appear that the US embassy in Manila has opened any appointments yet for January. 

My questions are :   If the embassy does not open any January dates prior to my NOA2 expiring and I end up having to schedule the interview after the NOA2 expiries, will that cause a problem?  Could someone who has experience and knowledge on this topic provide some feedback?
