Do I need multiple I-134 for sponsors?

My fiance is the the beneficiary and I completed an I-134 form stating I will be supporting her financially. My parent's would also like to volunteer to help support. Can they also fill out I-134 for my fiance or am I limited to the I-134 that I have?

If you meet the standard for the I1864P for sponsoring an I129F I would not bother with getting another one.  If you are close to the income threshold, then have your parents fill out a separate I134 with the required evidence, and your fiancé can take it to the interview in case it is asked for.

Thank you. I am well above that mark. Will my financial history affect anything? I moved back to America a year and a half ago and for my first tax return I was not making much money. It wasn't until spring that I landed a job in my field with the salary to support us.

Generally current income is key, and as long as your tax history is good you should be fine.
