Does anyone know of what difference it makes if your potential fiance' has a child?  If so, does the child go to the interview too?  Any other difficulties?  Do I file a petition just with the fiance' visa and just add the child's name and information?

How old is the child, sounds like the desire is for the child to immigrate as well which would be a K2.

Assuming potential fiance's child is a minor,  your fiance's will have a K-1 visa while her child will have K-2 visa.  You only have to file Form I-129F forher and add her child's information in the petition.
