I would think it is extremely unlikely for a K1, more something for married couples.

Life insurance policies with the partner /fiancé as the beneficiary and the current surrender value of claimed. As Boiler said.. Not usually something fiancés hold on each other

Does anybody know what this is? Thank you so much! 

I think this refers to the use of assets in the affidavit of support. An insurance policy can be used as one piece of evidence to show the estimated value of certain assets.

Cash Suttender Value ("CSV") is an amount of cash you can cashed out at a given time when you buy a Whole Life or Universal Life insurance policy.  With respect to I-134, that is the amount,if applicable, in additional to cash and other assets you can use to support your fiance.  Most people just buy a term life insurance policy, which CSV is not applicable.
