I have a copy of my I-797 notice, both on paper and electronic copy. Is either ok to use when presenting this to an agent at the airport?

Sometimes they want the original paper copy. Take that and several photocopies in case they want to keep one.

No agents would want to see original watermarked notice, not electronic copy.

Most of times the issue is airline not letting boarding the plane, not CBP in the US.

Make sure to arrive to airports earlier. Some airline agents never dealt with extension letters and don't know what to do.
