Thé interview itself is about the genuineness of your relationship. It would make the work easier, just the workload. There are lucky people tho.

A child doesn’t necessarily prove an existing or bonafide relationship. Plenty of single parents and children born out of one night stands.

Are the children the children of the petitioner?  How did they acquire their citizenship?  

Usually, will not impact the interview wait time.

Having USC children does not change the wait times of a K1 visa interview. The wait times are depending on the country they are being interviewed at. In fact they CO would not even know there are USC children until after the interview is set and the file on the desk.
