I haven't found anything regarding this on here. My fiancée is trying to set an interview date for her K1 visa, and the embassy website tells her that there are no appointment dates available. Has anyone else experienced this?

How many times a day does she check? How far ahead does she check? These appointments sometimes open at random times, even through the night and early morning. Which embassy?

US Embassy in Manila. She's only checked twice. Once last night and once this morning. She checks for any appointment, and it says none are available.

When I waited for my work visa in 2016, I had a similar situation. I checked every 15-30 minutes. I think since embassies implemented some limits... Can she only check few times a day? No surprise here, as Manila is super busy.

No, she could probably check more times a day. She just hasn't had an opportunity yet.

Just be patient...  when you least expect it the appointment calendar will pop up.  The Manila website will lock you out if you check too often or linger on the website.  I learned the hard way with a 72 hour lockout.  I suspect mine was due to leaving the webpage open after I checked for appointments.

Seems common, we see posts about this fairly often here on VJ. I haven't yet heard of anyone who never managed to get an appointment, it just took a little while. Keep checking - often. They likely have a certain schedule and open up new appointments on certain dates, and you can also find cancellations here and there if you check often enough.
