For O1 visas, how to know when to amend or change employers?

I have an O1 and need to adjust the itinerary soon. I had 3 items on my itinerary. Only 2 were paid but I'm replacing the 2 paid positions with a new paid position. Since the visa still has 1 item on it that isn't changing, can I simply do an amendment?

Other than sending in an updated I-129 and Itinerary what else about the petition needs to change?

 

Old Itinerary:

Job 1

Job 2

Uncompensated board position

 

New Itinerary:

New Job 1

Same Uncompensated board position
