I would like to inquire whether a U.S. citizen, who is the petitioner, residing and working in the UK with their spouse (a UK citizen) and son (a U.S. citizen), is eligible to provide Affidavit of Support (AOS) based on her UK income.

You will need to provide evidence that it will continue after the move.

NO, unless that income will continue from the same source, once in the USA.
