Employment Verification and Paystubs

When you get to the NVC stage, do you need to provide employment verification and pay stubs if you meet the minimum income? I typically work 6 months out of the year and the other 6 live in my wife’s country. I meet the minimum income requirement with no issues. The question is will they ask for the last 6 months of paystubs? Or will an employment verification letter be good enough?
