Joint sponsor or no?

My potential joint sponsors are not cooperating very well. 
I have excess of the required assets for my spouse which is three times required income for this cr1 visa I am a us citizen. 
I have three years of tax returns to add. Majority of my income is capital gains and dividends from my stock assets. I can prove all of it. My income was high (over six figures the last three years) however given the market this year, I have lost a lot and this I reported 0 income for the current year on the i864. For this reason I am a bit worried on whether this will be an issue and why I was thinking of adding joint sponsor (my parents or brother or sister) who have sufficient income for this year. 
 

Should I do the joint sponsor? Or just with me, I have sufficient assets just this current years income would be zero because of no gains on my investments this year.

Yes, you should use joint sponsors.  Especially if your most recent income is 0.

Make sure joint sponsors are in fact eligible to be sponsors (same criteria as for you). If they're not eligible or unwilling to sponsor, you have to find other sponsors.

Depends on how much over the 3X.  If the earnings are usually enough to support you without using principal, you probably have far more than the 3X the income requirement.  If so, no need for a joint sponsor.  You'll get a message suggesting one, but a multimillionaire would get that message if they showed no income.  Just ignore it.

But if I go ahead and not use any joint sponsor, what is the risk? What happens if the I864 does not get accepted? Do I then have a chance to use a joint sponsor at that point, which puts the immigration process back many months or what? What would happen? I feel it is safer to wait to get a joint sponsor now rather than risk it... my assets suffered a significant loss this year, but I am still at approx. 200K total. This is over the 3x HOWEVER I dont have current income this year.

I would go with a Joint Sponsor to be safe, they seemingly do not like assets. Well they did not when I went through it.

Adding a joint sponsor AFTER delays things a month or so.  Based on the new facts though, I would secure a joint sponsor, if possible.

The most important documents are related to his income. IRS tax returns for the last three years are preferred. Make sure he meets the criteria for sponsors. Their income needs to be above poverty guidelines, I believe 125%:

Supporting documents for joints sponsor are covered fully in the instructions.  If your brother is married, it is best practice to secure an I-864a from his spouse.

My brother the joint sponsor is currently not married.

 

For some reason he doesn't have a passport or birth certificate at hand. I was born in the USA, as was my brother and my two other siblings and my parents. He has the same surname as me.

 

What can I do? Can I write a letter or from my father explaining his children are all US citizens? Have my fathers birth certificate and mine.

No, that is insufficient. Anyone can write a statement claiming one is a US citizen.

Your brother requests a certified copy of his birth certificate from the State where he was born.
