Question for evidence and description for circumstances of your in-person meeting.

First question:  What level of detail is required for part 2 item number 54 asking about the circumstances of our in-person meeting within the past two years? First of all, I am assuming they only care about our most recent meeting, not all meetings or details about when and how we first met and started dating. Is this true or should I try and summarize our relationship and meetings in a few sentences? Something like "we first met in 2019.... we see each other 2-3 times per year.... our most recent in person meeting was...". Is this acceptable?

Second question: Our most recent in-person meeting was for 4 months in the US while my fiance was here with me while completing an internship under a J1 visa. We also took a vacation in the US during this time. Is this acceptable evidence to submit for the in-person meeting (her J1 visa, plane tickets, photos, and tickets of the vacation)?

All you have to say is that you met on X date in Y location and have supporting evidence of such.  You do not need to discuss the internship.

Take a look at the amount of space that is allotted on the form for the response.  This is an indication of the length of the response that they are looking for.  Two to three sentences maximum

I put a summary of our relationship history and number of times i went to see my fiancee in Thailand, in our Intent To Marry letter.  It helps prove a bonafide relationship

I just put2 or 3 sentences. I haven't gotten approval yet. But I saw many people on youtube damn near write books. That seemed silly to me.

Which is not a requirement to be proven during the petition stage

It may not be a requirement, but it's never a bad idea to do any little thing that can improve your chance of success.   Why are so many people here so quick to discredit and look for an argument?

How will including evidence that is not required improve your chances of success?  That's a bit oxymoronic.

We have actually seen situations where including evidence not required come back to bite the petitioner because it caused an RFE or outright denial, that is why.

In that section I put a very short explanation then we add a note with a little more detail (not much longer, 4 short paragraphs ). Our intention was to avoid getting a RFE and it worked for us :)
