what are my chances for appeal?

Virtually none if it’s not USCIS error

Or should I just file again and not waste more time and money?

Appealing costs $630 and the chances of it being denied in this situation are high.

New I-129F costs $535 with low chances of denial of issue is fixed.

If I reapply do I have to explain why I'm reapplying or I just submitted everything normally like nothing happened?

Depends on the situation. I would probably mention it but keep it brief and to the point.

How do you mention it, just attach a brief explanation on another page and staple it to the application?

Expand

Just include a page in the packet.

USCIS asks to not staple anything since they have to take it apart. They prefer paper clips and other similar things

Proof of citizenship you can use your passport too,so include your passport as a second proof of citizenship so you have a back up in case they somehow still see a mix up in your birth certificate.

Given the history, I advise against using a U.S. passport, for this, the K-1 visa, or I-485.

Get several US birth certificates in case there is an RFE for an original.
