Would a nonstick (titanium-ceramic, not teflon) with cooking spray (canola--I haven't found a till-oil spray anywhere yet) work to cook tortillas?

Cooking spray will work fine. (If you are cooking a lot of tortillas, you will have to re-apply a few times.)

If you're watching your calories and fat, corn tortillas are "healthier" than flour ones. And feel free to slather on the pico de gallo and salsa... they're low in calories and fat-free !

I even usually 'dry fry' them; just stack up a few (when cooking for one) and let them sort of steam each other. Just flip around what order they are in so they all get some time on the outside (touching pan) and some time on the inside (steaming between others).

Whew. Who knew you could write so much about tortillas? ;)

I don't know. The ones here in San Antonio are the first I've ever tried. Does the one in Calgary have a butcher shop and bakery in the back so everything is done "on the spot" as they do here? I've never before tasted a burger that was more like steak than ground meat.

Unfortunately, I've never actually been inside a Fuddrucker's (when I go to MacLeod Tr., I'm almost invariably aiming for "Taj Mahal"; occasionally, another restaurant such as Chi-chi's, or Balalaika).

I do wish that Indian restaurants in the US would (like the ones in Calgary) learn to use "Mongolian wrappers" for samosas rather than the white-flour shell that they normally do (fyi, the ones in Eastern Canada--such as Montreal and Toronto--also don't use the wrappers). The wrapper tastes better, holds shape better, AND uses less oil (a plus for the restaurant in terms of cost/profit) to cook.

Oh yeah! Fudruckers is DEFINITLY the only burger fast food I miss from US. I am fanatic over it!

I managed to find one in Puerto Rico and made Luis drive me there (an hour drive :rolleye: but it was worth it ´cus he had never had it and loved it as well.

Can I just say that it's the other way for me....I ended up leaving the states and moving to Belize to be with my sweetheart and I miss my Tex-Mex like crazy!!!!!!!!

I would make it myself but I happen to live on this tiny little island and I was excited recently when we finally got Cream of Mushroom soup in our little market. I use it for baking every now and then. So, maybe I shouldn't say that I just miss Tex-Mex but rather, I miss ingredients as well.

:P Good thing life goes on!

Cheesecake, cheesecake, CHEESECAKE!! If we had a Cheesecake factory he would drag me there whenever he's here on a visit. I have been warned that once he moves here I will need to know how to make the things, or have a constant supply of Sara Lee's in the freezer! :P

There is no such thing as a Cheesecake in France really, so what is French-style cheesecake?? :))

I like going to the county fairs around here for the bbq chicken and pork that is cooked out on huge bbq grates..there is a restaurant here in town that has a bbq grate the size of a 1/2 a semi trailer and they travel to different events..That's alot of bbq chicken!!! I don't ever recall seeing that stuff growing up in Ontario Canada.

OK, just found out he's got a new horrible weakness.

It's a hot dog, with liquid cheese, wrapped in a pretzel skin which is baked with a layer of Parmesan cheese on top and the whole thing brushed with garlic butter before they had it to you.

If he didn't weigh the same as he did 30 years ago, I'd have to kill him myself.

(those things are danm delicious tho)
