How apt a name. I've seen some call it "fourbucks", as many of the drinks cost at least that much ("char" just happens to be the transliteration of the Hindi/Urdu for "four"). :lol:

Is it possible to nuke or roast (like papads) taco/tostada shells?

"Possible" or "recommended"?

Papads (made from dried urad flour generally) are very easy to roast (if you have an exposed-flame type stove--won't work on electric) or nuke. They're edible (albeit, NOT as tasty as when deep-fried) this way.

I guess it may not work then for the taco/tostada shells.

Hmm. Depends on how you like them to come out, but I usually heat them in a frying pan until they get soft. To be fair, you could do them over an open flame, but again, depends on what final texture you're after. I like them for rolling things up in, so they should be pliable.

I concur !! Cooking on a hot greased comal (griddle or frying pan) is the only way to cook tortillas, either flour or corn, if you want proper flavor and texture. Using the open burner of a gas stove simply won't do for me (unless the tortillas are already cooked and I'm just re-heating them.)

Sriniv.... when you said "nuking," I read that as microwaving. I guess it's ok for re-heating already-filled tortillas. I wouldn't dream of "cooking" them in there.

By the way, heating Arabic (pita) bread on the open burner works great ! It's one of the reasons I have a gas cooktop.... yum yum :thumbs:

Pitas and chapatis do taste best when they're FRESH-puffed off the flame. :D:yes:

Would a nonstick (titanium-ceramic, not teflon) with cooking spray (canola--I haven't found a till-oil spray anywhere yet) work to cook tortillas?

And yes, by "nuking" I did mean microwaving.

Cooking spray will work fine. (If you are cooking a lot of tortillas, you will have to re-apply a few times.)

If you're watching your calories and fat, corn tortillas are "healthier" than flour ones. And feel free to slather on the pico de gallo and salsa... they're low in calories and fat-free !

Especially if the salsa is made fresh (or some facsimile such as using Ro-Tel, onion and bell-pepper--the vinegar that bottled salsas use as a preservative is a real flavour-trasher :P )

I guess my "multipurpose sauce" (basically, it's a fresh salsa--tomato, onion, bell pepper and some chilli, along with trace of urad and mustard seeds) would also work well. (I've had it with rice, iddly, dosai, chapati, pongal and even biscuit--admittedly, biscuits could be considered a non-health-food--tastes nice with any of them).

Even with flour tortillas, I tend to go for wholewheat (as these are more like a chapati--some desis use them AS) which is probably somewhat healthier than the white-flour.

My husband is Italian and to him everything else is dirty water :D If he doesn't make his espresso at home, he gets it from Starbucks.....oh, he's also addicted to their lemon pound cake.....

My husband is Italian and to him everything else is dirty water :D If he doesn't make his espresso at home, he gets it from Starbucks.....oh, he's also addicted to their lemon pound cake.....

With espresso, I find it tastes best when made in stainless-steel.

I found Kahve (which I buy whole bean and grind) yields (using my Essetti stainless-steel stovetop espresso maker) a much better espresso than Grab-bucks (I think they call it "Star Bucks" because they put the prices out at the STARS).

I love the fresh salsa and chips I get in restaurants here -- there are very few (if any) that serve that at home.

There are great steaks in this neck of the woods, and a fantastic Chinese restaurant (specializing in Shanghai style flavours) that make the BEST General Tso's chicken (drool), and a great Thai restaurant that we like to go to.

Long story short, I enjoy the foods here that I don't normally have access to when I visit home. :)

Mexican food. Tex-Mex, actually, since I'm in San Antonio now. Tacos al carbon... mmm mmm mmm . And hamburgers from Fudrucker's! I never liked hamburgers much before, but then I went to Fuddrucker's. Wow!

On the other hand, what the hay-elllllll (working on my new Texas accent :P ) does anyone see in a chicken-fried steak??? Bleahhhhhhh.... heart attack on a plate and that wallpaper-paste white gravy? Ewwwwwwww
