There was no chance the K1 could be approved. 

 

Apart from anything else, to get a K1 approved without meeting requires a waiver of that requirement, and from what you said your Lawyer never submitted that. And you have to have a REALLY good reason, they are unbelievably rare.

So back tot the Utah. I was doing more research. And I found the following. If anyone knows of anyone else who got married via Utah online marriage. Where one was a USA CITIZEN and the other not and immagration accepted the marriage.

There are numerous examples of members who have done this.  A Utah Zoom Wedding is not prohibited in the section you quoted.  You are certainly not the first to ask.   Here is just one example of a success:

In summary, it took 13 months for approval of the CR-1.  It took 44 months for approval of the I-751.  It took 4 months for approval of the N-400.   It took 172 days from N-400 application to Oath Ceremony.   It took 6 weeks for Passport, then 7 additional weeks for return of wife's Naturalization Certificate..

You didn’t include the entire stipulation: 

Relationships where one party is not present during the marriage ceremony (proxy marriages) unless the marriage has been consummated;[6

In fact, there are delays at the Philippines embassies now due to so many people now doing Utah zoom marriages and getting them registered .. Its quite popular and no issues with immigration if you pay attention to what everyone keeps telling you here.

So how are they going to know we consummated the marriage? Do they want videos or photos?

Photo with a date on it, like a newspaper.

 

Same sort of evidence that shows you have been together, have a valid relationship etc.

Proof you visited her. That’s why I suggested you get married via Utah while you are in Thailand. You can show proof you visited the country with boarding passes and entry stamps of Thailand still does that. Show the screenshots you were together for the wedding. And show photos of the two of you in Thailand.

As you’ve already decided when you get married remember you can only file the I130 after you’ve visited her in Thailand. That’s what consummated in this context means.
