You are missing the point.  Lets assume the offer letter was for start date in August of next year.

Then no. Especially if we are talking DCF. But, this is taking away from OP.

Well, let's say you didn't give me hope. In any case I will try again with the job offers, provided I have some at the right time. Regarding this, I would like to ask you if when they ask me for the I-864 form I will have a time limit to present it, under penalty of forfeiture of my Green Card application, or does it remain on standby until I have the right documents? I could delay the medical visits because they are valid for 6 months but in this case I would block my entire process. In 2019, I filled out form I-864 indicating only assets in cash and in Italy for a total of approximately $48,000. But that didn't unlock my visa. I only got approval after submitting a written offer, on letterhead from a US company, for both my wife and myself. I know I qualify for the Green Card, except for the economic ones, and I don't want to give up on this issue. My wife is a US citizen and therefore she can enter whenever she wants without constraints. The problem is me. But by blocking me they would also block my wife. I didn't give up in 2019 when the problem was the same and I won't give up in 2023. Therefore I ask you, from the top of your experiences and skills in immigration matters, to think of alternative solutions. I have an idea, if possible: I have been working in the olive oil sector in Italy for many years. I could set up a small company in the US that imports olive oil from Italy. I could generate adequate income to sponsor me. I could be the owner of the company or it could be my wife, I don't know which is the best solution. It could be an idea?

Nicolò

Have you filed the I-130 yet?

Do you actually plan on relocating to the US in the next 12-18 months or are you only applying for this benefit for "insurance" to allow you to travel to and from the US?

I want to move as soon I have the visa.

My options are now

1 - Try with jobs offer like the 2019

2 - My wife move to US soon and start to work there. In 2025 she will be able to sponsor me (in 2024 I think is almost impossible)

3 - Start a bussines in US where my wife is the owner. But she can continue live in Italy. In 2025 she will can sponsor me, I hope. I think is better that the company is a US comaony and that my wife, that's US citizen,  is the owner so she can have income to sponsor me. After all, the requested amount is only about $ 25,000
What do you think about this 3 options, or others if you have

Your wife will be able to sponsor you as soon as obtains a job in the US and has documentation as proof that she makes enough.

You are only thinking about the sponsorship issue. If your wife continues to live in Italy she will have to show proof she is planning to move back to the US (with or without you). Easiest option would be for her to move back to the US after I-130 is approved.

You can start a business for her and have her paid as an employee not a contract worker. This way she has a US based income and she is inside the US. She doesn't have to wait to complete taxes with an amount over poverty limit to be able to sponsor you. It is all about current income. You will receive a note from NVC stating they cannot determine if your wife is qualified to sponsor based on her previous tax filing in 2024 AND 2025. So, delaying things by a year won't make a difference.
