I cherry pick my responses because alot of the information in the replies were either informationally wrong, were negatively suggested of my character, were helpful of problems that I do not have, or seemed irrelevant to my post. Like you asking if I can afford to spend time in their country.

Your initial question is:

Planning on having a baby between K1 and adjusting status: problems?

All the answers are basically outlining potential problems you might have with this plan.

The main issue is timing.
As you have probably seen, USCIS works on its own timeline. So, you might discover

1.) You never obtain AP before the GC is issued- wife might be stuck in US for 6-18 months.
2.) You might receive AP a few months after you file adjustment but GC interview might be a month or two after AP- wife has to fly back to the US for interview. Might not be able to fly back to the US if she is too pregnant.
3.) You might receive GC without interview. Difficult to send GC to Madagascar after it is mailed. (Easiest issue to solve but costly)

4.) Your immigration journey after AOS is just starting so you need to figure out how to explain why (if this is the plan) you and your wife did not live in the US together after she entered on K1 visa

These are all POTENTIAL PROBLEMS  with your plan.

It was a total nightmare, if I had to do it all over again. I would do my best to have my kid born in U.S. even if medical cost would be 10k. It was so bad, they sent my daughter's green card to the wrong address and had call up our congressman to get the ball rolling to get it fixed. You think you're saving cost, but no. It took over a year to get immigration daughter's thing resolve, but I also still have to pay $1k to get her immigration finally settled. Thankfully we got my daughter's U.S passport but it's still not finished.
