I had to state the date of my interview and take the appointment letter with me - it was on their list of requested items I recieved after booking the appointment.  This was only a couple of weeks ago so recent.

The medical is not needed before an interview is set in consular processing, but it is requested to have it at least 2 weeks before the interview date to ensure they can send it to the embassy in time.

In my case IL received 29th June, I booked the medical on 29th June for 13th July, Interview is scheduled 8th August.

ok thank you

This might work for London at the moment, but, In general, this is not good practice for most consulates since interviews might not be scheduled for many months.  I would wait until the interview has been scheduled before completing the medical exam.  In fact, an interview date is required before booking medicals for many consulates.

Once the medical is complete, the clock for visa expiration starts ticking.

i wish knightsbridge would update the requirements for medical exam

Ok. I just want to be prepared on the documents they might potentially request from me as the petitioner and my parents as applicants

You can find those on the official site rather than using a third party site that may not be up to date - https://travel.state.gov/content/travel/en/us-visas/immigrate/the-immigrant-visa-process/step-5-collect-financial-evidence-and-other-supporting-documents/step-7-collect-civil-documents.html

My experience was that a few days after we paid all the required fees on the NVC site, my husband received an email from NVC stating the details of his interview at the Embassy in Jakarta and after that he go in touch with the assigned medical facility to schedule the medical exam.  As noted in other posts, the Hospital requires you to bring the Embassy Interview email when you go for the medical test.

At what stage in NVC can you book the medical exam? Can I book after paying NVC fees? Does the interview need to be scheduled first?

Medical is NOT part of the NVC process. The medical only happens after the consulate has the case and they have notified the beneficiary of the consulate process for medical and interview

K1 processes are different to IR   For K1 the NVC is only facilitating the case transfer to the consulate .. for IR Cases the NVC collects and checks documents and waits until thete is a slot available at the consulate before sending it on
