It's not uncommon for the visa to be issued after the two year anniversary. 

Most people do not send they application the day they get married, so that little time period+current processing time=over 2 years since the wedding day.

Certainly understandable.  Just keep in mind what has been discussed here when your spouse actually gets the visa as that may be a lot closer to the 2nd wedding anniversary.

Did you obtain CRBA and a U.S. passport for your child? Have you updated your I864 to include your new child as a household member? 
I see your spouse is from Morocco… she miiiight not receive her visa right after interview. Quite a few cases out of Morocco go through AP after interview. 
My advice: if after visa is obtained your wife has 10-20 days before 2 year anniversary. I would have her enter after 2 year anniversary. 
But, it is your choice… if your wife has no interest in obtaining US citizenship soon and/or petitioning other family members, or has a desire to travel outside the US frequently in the next 3-4 years going through the expensive ROC process will be a pain but not a major impediment to life in the US.

Haven't updated the I864 since he's been living with my wife since birth and hasn't yet entered the US.

 

Our wedding date in Morocco was December 2nd, interview is in a couple weeks, so assuming she gets the visa 5-10 days after interview (which we've heard from many people here and on FB groups) it's about a 3 month wait til our 2 year anniversary. 

 

Personally, we'd like to get back asap, even if it's a little more trouble later on. She won't be working in the US, nor petitioning anyone, and hopefully applying for naturalization after 5 years.

 

We would like to travel abroad in the next 1-2 years however, are there difficulties when you're applying to remove conditions?

Son is your child. You are now +1 for I864 (that is If son wasn’t on your approved i864 at NVC stage) I would update the i864 and have wife take it with her when she goes to interview. she can submit it in case they ask about the addition to your family and request a new i864.

Ah you know what I just double checked and I did include our child on the dependent children section which was DQ'd back in February.

She can travel with her expired GC and extension letter fairly easily.  There are some airlines that may not recognize that combo, but you can take a copy of the CBP carrier guide with you just in case.  The only issues is making sure any travel dates do not conflict with anything scheduled by USCIS.

Excellent! I’m glad to hear it… I thought you mentioned child was 4 months old and didn’t know if they were born before I864 was submitted. 
You’ll be fine! If everything goes well then hopefully your wife will be able to join you in the US before a few days/weeks after her interview. 
It seems like ROC will be annoying as opposed to something you actively want to avoid so have her and your son move to the US as soon as they’re able!
