Did he download his tax return transcripts?

Yes we have the tax transcripts. I will only have a temporary visa for Chile, so my permanent address should stay the same, no? Or does it not matter for the I-865?

It’s a visa to live and work in Chile. Even if it is temporary you are moving to Chile for 9 months. 
Do you plan on returning to the US often and seeing your husband during that time?

Your physical location is changing. You need to let USCIS know you are no longer living in the U.S.  This will prevent the exposure to a finding of material misrepresentation from amplifying.
