I see a lot of people saying they are asked for a joint sponsor even when they are making more than the income requirements. I don’t really have anyone I know that would be willing to be a joint sponsor in my case. Im not at nvc yet but I’m just thinking ahead of what’s to come. Im employed and work extra hours every month to assure my w2/tax transcript reflects enough to qualify for a sponsor. Will the consulate look at paystubs and take the extra hours into account? Or do they just look at the tax transcripts? By the time we get to the consulate, the two most recent transcripts will be above income requirements but the third might not.

You are only obligated to attach the most recent tax transcript. The 2nd and 3rd most recent are optional.

As long as your Adjusted income in your most recent tax transcript AND the most recent paystubs (3 months) are above the 125% poverty limit by a decent margin, you will be ok

Adjusted gross income only applies if the sponsor files a 1040EZ instead of a 1040.  Total income is the number entered on the I-864 tax section.

In a situation where you are working extra hours and not all gross pay numbers will be the same, yes I would calculated gross current income from a few pay periods and include the related pay stubs.  Four pay periods should be plenty.  So add the gross for four pay periods, divide by 4, then multiply that number by the number of pay periods in a full year.  Every two weeks (most common) is 26 pay periods.

If last years income isn't enough to qualify, you'll get a note you can ignore, if your current income is clearly over the minimum.
