For some, 8 months is how long it takes to get the advance parole...  Ajustment of status has the benefit of being together, but otherwise a lots of downsides.  Just make sure you both realize that.

 Suggest you look at the timelines for that, as well as for the EAD and the green card itself.  Nothing is fast, or cheap.

So for example, if our joint sponsor only made like 20k a year, but USCIS requires 31k. Could I make up for it with my assets?

31-20 = 11. 11 x 3 = 33. I have more than 75k in assets.

This is more a general comment but car etc not likely to work, now maybe if you have a car collection, but then somebody in that situation is unlikely to need a joint sponsor. Something that has a clear value and is surplus, so not  a house you live in.

No

 

That has been covered, and anyway the requirements in CA terms are miniscule.
