I am American, fiance is Vietnamese, we live in Japan and want to move to America

Timeline

I am seeing on the site that marriage licenses expire 32 days after getting it? Also are we required to have a wedding? We are planning to have the wedding May of next year.

Utah do the wedding, you can wait of course until next May.

You can get paper married before you leave for the US at the end of July. Then you can have a ceremony in May 2024 - in Japan, Vietnam or the US (if your partner obtains the visit visa). But, I would recommend just getting paper married, file the I-130 and have a ceremony once your wife obtains her immigrant visa- 18 to 24 months after submission of the I-130.

So quick update,

 

I am back in America and my fiance did get the visitor visa. She is coming in the winter. We are thinking about just getting married when she visits and then do the I-130. Would this be alright?

Congrats! 
I’m partial to getting married in the US (did it myself).

Then I’m a fan of filing I130 once she leaves the US. 
Will she stay in Japan for the next two years or move to Vietnam?

Most likely stay in Japan so she can keep working and saving money.

 

So you don't see any issues with us getting married when she visits this winter on a touring visa?

No issues. Many of us on VJ have married in the US and then gone through consular processing.
