I didnt know I would be charged $50 a paycheck for adding my wife to work's health insurance since she doesnt have a SSN otherwise I would have got her one as soon as she arrived. Can I go apply for one now even though I mailed the AoS packet saying "yes assign her a SSN"? or would it mess things up

Assuming this is K1 AOS, if you are very close or past day 75 of the 90 days on I-94, you cannot get an SSN without presenting an EAD or GC. One of the first things that is advised on this forum to for a K1 to apply for SSN as soon as they arrive in the US.

Ask them to use another identifier, you are not required to disclose your SSN to health insurance companies.
