My wifes petition for her mother is in the NVC stage. My wife has been out of work for almost a year due to covid and giving birth. I havent stopped working. Yet we are household size of 4 and need income of 37500. Our tax transcripts for the last three years exceed that. However my job has been slow so far this year due to taking time off for moving and maternity leave. Anyways if my tax transcripts that i filed with my wife exceed 37500 each year should i be all set? I also have a savings which i can use to make the difference for the i864? Say income is 32000, and i have a savings of $30000 would that be sufficient enough?

See the "If You Can’t Meet the Minimum Income Requirements" section here: https://www.uscis.gov/green-card/green-card-processes-and-procedures/affidavit-of-support

You must prove the cash value of your assets is worth five times this difference

$37,500 - $34,000 = $3,500

$3,500 x 5 = $17,500 in assets needed

If you are not currently working then your current income is zero, and you are not set.

I am working right now my wife isn't and she is the one that peitioned. So i would have to do the joint sponsor option? Another possible issue is i started this job last year so i don't have a full years worth of income, however at the rate i am going i would exceedt he income requirement

Savvings of $10,000 or $30,000 as u posted both?

u have to prove the amount  by a formal document from bank or saving's institution

Savings is over $30000

She can include your current income as her house hold income.

Some embassies will require you to fill out I-864a.

Current income = gross pay on last pay check times number of pay periods per year

I havent gotten a full years of pay at my new job at UPS. When i submit the i864 would recent pay stubs be enough to show i can exceed?  2000$ gross * 26 pay periods is $52000 a year.

Yes.  That is correct.
