I was wondering, since I have been putting together my evidence for my I-751 I have been making color copies should I change this to black and white, mainly I’m concerned about the green card, DMV ID card or write copy across the evidence or would it be safe submitting color copies.

B & W is fine, most people do not have access to a fancy color copier, and they don't expect color copies. If you did use color copies that is fine also.
