I've seen people get RFEs for meeting req and everything you have + itinerary are options listed as proof along with boarding passes and forms such as I-94. No where do they say you must have undeniable proof of meeting. 

 

It's about convincing the officer you met. No one can say for sure exactly how much it takes to convince them but a boarding pass is 100% not a requirement, it's just stronger evidence

Yeah so they can request that then, I didn't disagree with you but then why don't people suggest how to do that instead of berating about lost boarding pass or meeting again?

 

I've never had to pull those records anywhere but US so I have zero experience and wasn't sure if they're accessible in every country

This is getting silly.   To clarify for others:

 

The requirement to have met in the immediate two years is absolute.   Receipts from restaurants hotels, , events, etc around the time of the meeting are good, as is evidence that you actually took the flight (not itinerary or receipt-  those do not confirm that you travelled).   This is all primary evidence.

 

Photos taken together is considered secondary, as the date it was taken is not always verifiable.

I’m certainly not berating anyone.

 

I’ve been on VJ for 7 years, and we did a K-1.   So my advice is based on that.  

 

YMMV.

I do have my itineraries, I forgot to add that in the original post. They're bare bones documents but I have them. I mean, feasibly I could've driven to Cancun so I'm hoping boarding passes and stamps are not necessary (from what I understand, you don't need a passport to cross from Texas to Mexico). I have bank statements from ATMS and ferry rides, but I really only used my card to pull cash out. My fiancé has his ducks in a row thankfully.

I think you're fine honestly. It's really up to you, people get approved without boarding passes all the time but there's no guarantees. 

People I know personally had i-94 so can't speak for cases I know personally

Have you tried to call the airline? Some airlines like Delta, Lufthansa, Air France,...etc. you can download the history online (i did recently) however I don't think that's being any issue you already have other proofs
