Don't confuse your interview date with your visa issue date.  For a Pakistani male, those two dates could be a year or more apart.  I don't know what the wait is for an interview, but it is a few months to a year or more AFTER the interview, before you'll have a visa.  Sounds like you'll DQ without a joint sponsor.  Anytime after that, I would "replace" your joint sponsor with a new one that qualifies without complications.

So, I'm not sure but I think my interview date is nearing. I do have another joint sponsor lined up, my brother in law, but the thing is, he got the job in March and his first paystub came out April 5th, which is around $1600, and this is his weekly income after all tax deductions. Will he qualify considering his income is not yet reflected in tax return?

Yes, because he will document current income with a pay stub, not a tax return.  His income is the gross times 52, not the net after deductions.

Alright, thanks!
So should I bring his financial document package to the interview or directly submit it in the ceac portal, before I receive interview date? If I do submit it in the portal NOW, will that delay my case?

Submit to CEAC after you know  your interview date, and before the interview.

Thankyou!

I received my interview date, and will submit my BIL's documents two to three weeks before the appointment.

Since my FIL is no longer qualified to be the JS, do I need to bring his updated i-864 to the interview as well, or just bring along what originally was submitted? Do I also need to update my wife's i-864 as well, since she also does not meet the income requirement?

No need to submit anything new from the unqualified people.  Your wife should mention the FIL lost their job and is no longer qualified, so they can withdraw his affidavit in favor of the new one.
