Yes, but you can submit all three if you think it will help.

I have been reading those instructions. In those instructions it states the following:  "If you provide a photocopy of your tax returns, you must include a copy of each and every Form W-2 and Form 1099 that relates to your returns. Do not include copies of these forms if you provide an IRS transcript of your returns rather than a photocopy unless you filed a joint tax return with your spouse."

 

I am confused as to if me and the joint sponsor should be uploading our W-2 and 1099 or should we just upload the "Tax Return Transcript" ... I personally have downloaded my Tax Return Transcript from the IRS Website. I am not sure yet how our joint sponsor will be providing his (downloading from IRS Website, scanning them?, sending in the 4506-T Form?)... but, can you clarify if I should be uploading my W-2 and 1099 as well?

Looks like you read the instructions.  Interpret them literally.  Do not make arbitrary additions to them.

If they refuse our first and only joint sponsor will our case be reject/done or will they give us an opportunity to add another joint sponsor? I have two persons willing to be joint sponsors; one of them has a good paying job and pays his taxes every year and the other doesn't have a job but has good cash assets and pays his taxes every year.

If it's all the same to you and them, choose the employed one.  You cannot "add" another joint sponsor but you can replace one.
