I'll be submitting an I-140 for an EB3 visa. Anyone require an apostille for their birth certificate? If yes, did you need it in the initial stages or just before your embassy interview? Thanks!

I don't think so? I'm nearing the end of the I-129 / CR1 process with an original NZ birth certificate and it's been accepted all the way through.
